Chocolate Egg Brownies

Soft fudgey, cakey brownies dotted with little nuggets of mini chocolate and caramel eggs.

Ingredients

  • 3 eggs
  • 200 g/7oz caster sugar
  • 140 g/5oz butter
  • 110 g/4oz dark chocolate 70% cocoa solids
  • 85 g/3oz milk chocolate
  • 85 g/3oz plain flour
  • 30 g/1oz Green & Black’s cocoa powder
  • 1/2 tsp baking powder
  • 5 Mini caramel eggs cut in 1/2
  • 5 Mini Daim eggs chopped in 1/2
  • 5 Mini Lindor eggs chopped in 1/2

Instructions

  • Preheat oven 170c/375/GM5/Aga baking oven.
  • Line a 24 x 24cm/ 9" x 9" tin with baking parchment.
  • Crack the eggs into the bowl of your food processor, add the sugar and whizz for 3mins. You can use an electric hand whisk too.
  • Melt the butter, plain and milk chocolate together in a bowl in the microwave or in a bowl over some hot water. Stir to combine.
  • Sift the flour, cocoa powder and baking powder together in to a large bowl.
  • Add the melted butter and chocolate to the Magmix and whizz just to combine. Then add the flour, cocoa and baking powder, whizz again - just to combine.
  • Pour into the prepared tin and dot the chocolate egg pieces all over, push them into the mixture.
  • Bake for 25mins in the oven or on the grid shelf of the floor of the baking oven of the Aga for 25mins, depending on how fudgey you like your brownies. Take them out of the oven and leave to cool. When completely cold slice and serve.

Notes

Think Ahead & Helpful Hints
• If you don’t have a magimix, use an electric whisk.
• I always let my brownies get completely cold before slicing. They are great made the day before and last in an airtight tin for 5 days. They also freeze beautifully.
• To eat warm, wrap in baking parchment and tinfoil, warm in the baking oven of the Aga for 5-7mins or gently reheat in the microwave but dont wrap in foil.
• This is the perfect recipe to add your favourite chocolate to. I make Rolo & Munchie brownies and at Christmas when there is lots of Toblerone in our house, I make Toblerone brownies.
